Prawn Pasta

Serves 2 people + enough for leftovers
Ingredients
- 1 x packet of Spaghetti
- Handful of green Prawns
- Mussels (pick the quantity you desire when shopping)
- 1 x bunch of fresh basil
- 1 x small packet of Cherry tomatoes
- 2 x Garlic cloves
- 1 x Fresh chilli
- Olive oil
- Dash of salt
Preparation
1. Bring a pot of water to the boil, then add pasta, cook 6-8 min (or till al dente). Always best to read back of packet for cooking time
2. Chop up cherry tomatoes, garlic, chilli and basil
3. Heat up a fry pan add dash olive oil, add garlic, chilli and fry for 2min
4. Add tomatoes and basil
5. Add prawns and mussels (don’t over cook!!) only take a couple of minutes to cook (Prawns should become opaque)
6. Drain and serve pasta into bowls then add seafood
Tips
1. You can use wholemeal pasta if you’re watching your carbs!
2. I like to add white fish and squid if available
3. Great if you have a big week of training!
4. Fresh basil and chilli from the garden is your best option, but you can use packet herbs or even dried herbs as an alternative
5. If time is an issue cook a larger batch and have for the next day (of course keep for no more than a day)
