Spicy carrot & coconut soup

Serves: 5
Ingredients:
- 1x tablespoon butter
- 2-4 x garlic cloves
- 1kg carrots-washed & roughly chopped
- 2 x Tablespoons of Tumeric
- 2 x Tablespoon Ginger (Grated fresh or from a jar)
- 2 x Teaspoons Cinnamon
- 2 x Tablespoons fresh Chilli chopped
- Salt & Pepper
- 1x Can lite Coconut Cream
Preparation:
- Heat butter in large saucepan over medium heat,
- Add garlic,water and herbs
- Add carrots & simmer for 30min or until very soft.
- Blend until smooth & return to saucepan,
- Add coconut cream & serve.
Tips
- Can freeze or will last in fridge for 5 days
