Spicy carrot & coconut soup

Serves: 5

Ingredients:

  • 1x tablespoon butter
  • 2-4 x garlic cloves
  • 1kg carrots-washed & roughly chopped
  • 2 x Tablespoons of Tumeric
  • 2 x Tablespoon Ginger (Grated fresh or from a jar)
  • 2 x Teaspoons Cinnamon
  • 2 x Tablespoons fresh Chilli chopped
  • Salt & Pepper
  • 1x Can lite Coconut Cream

Preparation:

  • Heat butter in large saucepan over medium heat,
  • Add garlic,water and herbs
  • Add carrots & simmer for 30min or until very soft.
  • Blend until smooth & return to saucepan,
  • Add coconut cream & serve.

Tips

  • Can freeze or will last in fridge for 5 days
