Slow cooked lamb

Ingredients:
- 1.5kg - 2kg leg of lamb
- 3 x Cloves of garlic cut into slivers
- 2 x Sprigs of rosemary, (cut into pieces to stuff in lamb with garlic)
- Olive Oil
- Salt and Pepper
- 1 x large onion, sliced
- 20g of Butter
- 1/4 Cup of Continental Parsley, Chopped
- 1/2 Cup of Chicken Stock
- 3 x Spuds, peeled and halved
- Some veg of your liking, chopped up for steaming
