The BEST Gluten Free Banana Bread

Covid-19 restrictions has meant spending a whole lot more time at home

And with this time, Yvette and I have cooked MORE than ever

However…

I won’t steal Yvette’s thunder on this one

This is a recipe she has worked on and has perfected!!!

So here it is for you all:

Ingredients:

4 over ripe bananas

3 Eggs

1 teaspoon of vanilla extract

3 teaspoons of honey or maple syrup

1/4 cup of melted coconut oil (60mls)

2 and 1/2 cups of almond meal (300gm)

1 teaspoon of baking powder

1 teaspoon of cinnamon

1 cup of blueberries (you can replace this for 1 extra banana or 1 cup of strawberries or 1 cup frozen berries)

Method:

1. Mash the bananas with a fork in a bowl

2. Add to the mashed banana to the eggs, coconut oil, vanilla and honey then mix

3. Combine the almond meal, baking powder, cinnamon and mix it all together.

4. Add this to the wet ingredients

5. Fold in your choice of either blueberries, strawberries or frozen berries

6. Grease a bread tin and pour in mixture

7. Bake at about 170 degrees for approx 55 minutes until crispy on top and cooked through

8. Allow to cool for 20 minutes before serving
